Either will handle deer fine. I happen to be a .270 fan. It will shoot very accurately well beyond 300 yds. and has a lot less recoil than the 7mm. The 7mm gets a little more range and will shoot a heavier bullet if you decide to try larger game. If you plan to do a lot of bench practice, the Speer reloading manual warns that the 7mm barrel will heat up quickly and erode if you shoot fast. trashing your accuracy. You need to keep the barrel relatively cool to prevent ruining it. I have an older Ruger M77 and love it. There has been a lot of discussion in this group that indicates that the newer Rugers have accuracy problems. Supposedly the Rem shoots better, but I haven't tried one myself.

Got a Ruger M-77, Mk II VT in .308. Great gun. Shot a big Mule Deer Doe at 350 yds. It is a little heavy a 9# though.

I'd give the 7mm, any of the 7mm's except the belted magnums or the 7mm-.308, the thumb's-up over a .270. Remington caused some confusion when they renamed the .280 the 7mm express, but that cartridge was clearly considered the best of the bunch by old-timers everywhere. There's not much difference between them and you can't go wrong either way. My Remingtons are more accurate than my Rugers, except for the Ruger #1's. They just feel more comfortable, but it might be the opposite for you. From my personal experience, the Remington is most accurate with a maximum load, while a Ruger in the same cartridge is more accurate with a lesser charge. It might have something to do with the barrel contour. Test several brands of ammo for accuracy, usually one brand will give better results than the rest. Have fun.

I presume you are speaking of the 7X57 when you refer to the 7mm. If so, both are very good calibers for your purpose. In similar rifles, you would be hard put to notice any difference when shooting them. Both are good, accurate cartridges with similarities in performance. Now, if you were referring to the 7mm Magnum, it can be a lot more cartridge than the 270 - on both ends of the gun. However, the 7 Mag can be loaded light to get roughly the same performance and recoil as the 270.
